Mixed Up Ice Cream Cake

A 3 ingredient ice cream cake that takes only minutes to put together.  Combining different flavors of ice cream adds some surprises to each serving!

Ingredients

Scale
  • 18 Klondike ice cream sandwiches, 3 or 4 different flavors of your choice
  • 8 oz Cool Whip – low fat or regular makes no difference in taste
  • 1 cup bittersweet or semi-sweet chocolate chips

Instructions

  • Chill 2 8×8 casserole dishes 
  • Cut the ice cream bars into quarters, dividing them equally between the 2 dishes
  • Alternating flavors, line the casserole dishes with 2 layers of the ice cream
  • Top each casserole dish with Cool Whip
  • Sprinkle chocolate chips on top 
  • Cover tightly with aluminum foil 
  • Freeze for at least 8 hours 

Try to hide the second one for a future dessert!

Notes

You can make one big ice cream cake using a 9×13 dish. 

To make it an “occasion” cake, you can get tubed icing and sprinkles and create your own message on top of the cake after it is frozen!
