Easy Breakfast Enchiladas

A flavorful breakfast of whole wheat tortillas, eggs, cheese, spicy sausage and salsa. The option to prep it a day in advance is a great time saver!

Ingredients

- 1-pound spicy ground chorizo sausage
- 2 TBSP olive oil
- 6 thinly sliced scallions
- 6 TBSP chopped fresh cilantro, divided
- 12 large eggs, beaten
- ½ tsp salt
- ½ tsp pepper
- Canola oil cooking spray
- 8 (8 inch) whole wheat, low carb tortillas ** see note below
- 3 cups shredded reduced fat Monterey Jack or cheddar cheese
- ½ cup cherry tomatoes, halved (for garnish)
- ¼ cup sliced scallions (for garnish)
- 1 cup fresh mild or spicy salsa – found in the vegetable sections of most stores
Instructions
- Pre-heat oven to 350 degrees
- Lightly spray a 9×13 baking dish with the Canola oil
- Cook sausage in a large non-stick skillet over medium heat. Stir until sausage crumbles and is no longer pink. Remove from the pan, drain well on paper towels, pressing until the sausage is dry. Place on fresh paper towels
- Wipe out the skillet and warm the olive oil in it over medium heat.
- Add the scallions and 3 TBSP of cilantro and cook for 1 minute.
- Add the eggs, salt and pepper and cook, without stirring, until eggs begin to set on the bottom. Draw a rubber spatula across the bottom of the pan to form large egg curds.
- Continue to cook until the eggs are thickened but still moist. Resist the urge to stir constantly!
- Remove from heat, add the sausage, folding in carefully.
- Spoon 1/8th of the egg/sausage mixture down the center of each tortilla. Top with ¼ cup of the shredded cheese.
- Roll up, place seam side down on the baking dish. Continue with the rest of the tortillas.
- Spoon the salsa over the tortillas and sprinkle with the remaining cup of cheese.
- Bake for 30 minutes or until the salsa and cheese are bubbly.
- Garnish with remaining cilantro, scallions and tomatoes. Serve hot
Notes
Tip – to make it ahead – prepare the recipe without baking. Cover tightly and refrigerate overnight. Let stand at room temperature for about 40 minutes before baking uncovered. Garnish after baking.
**Note: Low carb whole wheat tortillas can be found in many grocery stores. They are an excellent source of nutrients and much lower in calories than flour tortillas; most are about 50 calories per 8-inch tortillas.
