A cross between crab balls and crab cakes, these appetizer nibbles are bursting with crab and just enough other ingredients to hold them together! Instead of the usual cocktail sauce, try a roasted red pepper spread instead. It really adds a pop to the enjoyment!

Ingredients

  • 1 lb can of crab meat (I use claw)
  • ½ cup red onion diced small
  • ½ cup red bell pepper diced small
  • 1 TBSP butter
  • 2 TBSP whole grain mustard
  • 2 TBSP mayo
  • 1 egg beaten
  • 2 cups crushed Ritz crackers
  • 4 TBSP milk
  • ½ cup parsley chopped
  • Zest and juice from one good sized lemon
  • 1 ½ tsp Old Bay seasoning
  • 1/2 tsp of cayenne

Instructions

  • Sauté the onions and pepper in the butter just until tender. Set aside to cool.
  • Combine all crab bite ingredients, including the cooled onions and peppers, and then chill in the refrigerator for at least an hour.
  • When ready to bake, preheat the oven to 375 degrees. Line a sheet pan with parchment paper.
  • Form 24 crab bite balls, place on baking sheet and spray lightly with canola oil.
  • Bake for 20 to 25 minutes until golden brown and cooked through. Serve warm.

Notes

Claw meat works best for this dish. Jumbo lump or lump crab would be too big given the size of the Nibbles.
