Broccoli Crowns with Tomatoes

An easy side dish that combines bright green broccoli with vivid red tomatoes topped with lemon zest.  Colorful, flavorful and full of good nutrition!

Ingredients

Scale
  • 4 cups of broccoli florets
  • 1 cup grape tomatoes, sliced in half
  • Zest of 1 large lemon (about 1 TBSP)
  • ¼ tsp EACH salt and black pepper
  • 2 TBSP olive oil

Instructions

  • Bring a large pot of water to a boil, remove from heat and add the broccoli florets.  Let sit for 5 minutes, drain and place in a serving bowl. 
  • Add half of the tomatoes and toss gently with the olive oil, salt and pepper until well coated.
  • Arrange the remainder of the tomatoes on top and sprinkle the lemon zest over the entire dish.
  • Serve immediately.

Notes

You can substitute fresh green beans for the broccoli but adjust the amount to your liking. 4 cups of string beans is a big amount!
