Bourbon Tomato Bacon Jam

Who can resist bacon? This is a sophisticated but easy condiment made from 6 ingredients!  Perfect on hamburgers, toasted bread, biscuits- just about anything! The smoothness of the bourbon calms the acidity of the tomatoes and onions, eliminates the need for additional sugar and gives this jam an unusual richness!

Ingredients

  • 1 lbs. of bacon, diced
  • 2 lbs. of fresh tomatoes, seeded and diced
  • 1 1/2 cups of sweet onion, diced
  • 1/2 cup brown sugar
  • 1/2 cup bourbon
  • 1 TBSP Tabasco Green Pepper Sauce
  • 2 TBSP parsley, leaves only, chopped

Instructions

In a large skillet, on medium heat, fry the bacon to crisp. Remove from pan and let drain on paper towels.  Discard the bacon grease, leaving only a thin layer in the skillet.

Return the bacon to the skillet and add the tomatoes, onions, brown sugar, pepper sauce and bourbon. Bring the concoction to a gentle boil over medium heat, reduce heat to a simmer and cook until the liquid is reduced to approximately 1/4 cup.  This may take up to 45 minutes.

When done, remove from heat and stir in the parsley. Cool to room temperature then refrigerate.

Notes

May be frozen in freezer safe containers up to 4 months.  Defrost in the refrigerator.
