Very Berry Strawberry Salad

This is a strawberry salad that is a little on the tangy side and very easy to put together. Loaded with strawberries, cherry tomatoes, pecans and feta cheese crumbles plus a little pop of red onion, it is dressed with a smooth pomegranate balsamic vinaigrette. Makes a terrific accompaniment to grilled chicken! This would be a nice vegan side dish if you skip the cheese.

Ingredients

Scale
  • 4 cups of mixed greens
  • 1 1/2 cups sliced strawberries
  • 1 cup multi colored cherry tomatoes sliced in half
  • 1/4 cup thinly sliced red onion
  • 1/2 cup feta cheese crumbles
  • 1 cup pecan halves, lightly toasted
  • Dressing – mix together –
  • 4 TBSP Extra Virgin Olive Oil
  • 1 TBSP plus two tsp pomegranate balsamic vinegar

Instructions

Mix greens, berries, tomatoes, pecans and onions in a large salad bowl. Toss with the vinaigrette and mix gently but thoroughly. Sprinkle the cheese on top (if using) and serve. (Sometimes I save a few berry slices to arrange on top of the salad right before serving)

Notes

Note: a plain balsamic dressing would be okay but I found that this homemade dressing really helped the ingredients shine. Another thought – you can add the grilled chicken to the salad and make it a wonderfully light lunch.
