Broccoli Crowns with Tomatoes

An easy side dish that combines bright green broccoli with vivid red tomatoes topped with lemon zest. Colorful, flavorful and full of good nutrition!

Ingredients

- 4 cups of broccoli florets
- 1 cup grape tomatoes, sliced in half
- Zest of 1 large lemon (about 1 TBSP)
- ¼ tsp EACH salt and black pepper
- 2 TBSP olive oil
Instructions
- Bring a large pot of water to a boil, remove from heat and add the broccoli florets. Let sit for 5 minutes, drain and place in a serving bowl.
- Add half of the tomatoes and toss gently with the olive oil, salt and pepper until well coated.
- Arrange the remainder of the tomatoes on top and sprinkle the lemon zest over the entire dish.
- Serve immediately.
Notes
You can substitute fresh green beans for the broccoli but adjust the amount to your liking. 4 cups of string beans is a big amount!
