Sweet Potato Home Fries

A switch-up from the usual breakfast fried potatoes – a large sweet potato, thinly sliced, sauteed in olive oil with a dash of crushed red pepper.

Ingredients

Scale
  • 1 large sweet potato, about 67 inches long
  • 2 TBSP olive oil
  • 1/2 tsp crushed red pepper

Instructions

  • Scrub the sweet potato thoroughly and dry it with a paper towel
  • Slice into 1/4 inch slices then quarter them
  • Place in a microwave proof bowl and cover with either waxed paper or plastic allowing for ventilation
  • Cook on high for 3 minutes, remove from microwave
  • Warm the olive oil in a non-stick pan over medium heat
  • Place sweet potato slices in the pan and add the crushed red pepper
  • Cook for about 15 minutes, tossing them every few minutes so they get a nice golden brown color
  • Serve hot 

Notes

One sweet potato goes a long way between 2 people but this recipe can be easily doubled or tripled. Just make sure the potatoes are cooked but firm once they come out of the microwave.
